Tasting Notes
The Xinomavro Rosé from Theopetra Estate has a beautiful salmon colour.
It has a very attractive nose with yogurt, raspberry and rose petals. There is also a more savoury side to it with a touch of tapanade and a distinctive minerality.
On the mouth it’s round and refreshing with its very nice acidity. On the palate notes of yogurt and raspberry come back, together with a citrus note of grapefruit maybe and a nice sapidity.
The finish is medium.
How it's made
The wine undergoes pre-fermentative maceration for 4 hours and free-run juice partial draining (saignée method). Fermentation in stainless steel tank at low temperatures. Aging on lees for 40 days.

Xinomavro
Xinomavro is a red grape variety from Greece. The name translates to sour-black (“xino” = sour and “mavro” = black).
This grape is widely grown in Greece. It can produce pretty much any type of wine, from rosé to white sparkling wine to red, good-aging wine!
Because of its character, Xinomavro is often compared to Pinot Noir or Nebbiolo. Just like Pinot Noir, it is too a quite demanding grape variety. The terroir and climatic conditions need to be just right for it. Also, the yields per hectare must be kept low to allow Xinomavro to give the best of itself!
Since recent years some attempts of cultivating Xinomavro have been made in Gansu province, in north-central China.
